The leaves of the Tamarind Tree are pinnate, with 10-20 pairs of leaflets that are oblong and about 2-3 cm long. The tree produces small, yellowish flowers that are borne in clusters, and these are followed by long, curved pods that are about 10-15 cm long. The pods contain a brown, sticky pulp that is sour and tangy in taste, and this is used in many culinary dishes, especially in Indian cuisine.
